Next Monday is the RSPCA Cupcake Day and it is the perfect opportunity to combine two great loves of mine, animals and baking! I am hosting the cupcake extravaganza at work (ok that might be overselling it slightly – my office is quite small) and I am just starting to look at my potential options of what to bake on the day.
I have recently stumbled across foodgawker and I fairly obsessed. It allows you to scroll through recipes via their images and all are linked back to the original source and recipe. Think pinterest, but more selective on what they display. It has proven very handy at finding some recipes to choose from (not only for cupcakes, but a lot of my recent dinner recipes too). I am currently deciding between the following recipes for Monday’s cook off:
- Rainbow cupcakes
- Red velvet cupcakes (option 1, 2 and 3)
- Oreo cupcakes
- S’mores cupcakes
- Banana Cupcakes with Cinnamon Cream Cheese Frosting
- Carrot Cake with Cream Cheese Frosting
- Vanilla Cupcakes with Vanilla Buttercream Frosting
- Lemon meringue cupcake
It is going to be tough – I may end up choosing more than one to bake..

I made Earl Grey cupcakes with lemon cream cheese frosting over the weekend – they were a hit! I love any cupcakes with cream cheese frosting, might try the banana and carrot varieties on your list

I too am a sucker for cream cheese frosting – it unfortunately isn’t a cost effective frosting though.
